Breakfast Casserole the Whole Family Can Enjoy

My friend sent me this recipe, so I made it and loved it. As usual, I don't expect to be able to share most things with AJ, given all his restrictions and measurements. However, after the second time making it, it began to dawn on me that the ingredients are all Ketogenic friendly.


Cheese. Butter. More Cheese. Eggs. Spinach.


It's a rare dream to be able to make something that the whole family can eat together. I was excited to submit this to our Keto Team for input into the KDC.


Spinach, Cheese and Egg Casserole

9 whole eggs (486g)

1 16oz whole milk Cottage Cheese (Organic 365 brand) (454g)

1TB onion granules (9g)

1 12oz package frozen chopped spinach, cooked (430g)

10oz Kirkland jack/cheddar cheese (255g)

3/4 stick butter (83g)


(Total weight after cooking 1,351g)


You can use a similar format, inserting your own preferred brands. Your nutritionist can update the rest in order to create a personalized item in the KDC, so you can then add other elements to complete your meal.


For example, I add the following ingredients to complete his meal in the proper ratio:

Avocado

Avocado oil

Heavy Whipping Cream

10% Fruit

Roasted, salted pecans


This casserole is seriously delicious, and it is especially wonderful to be able to eat it together with AJ, as a whole family.


*PRACTICAL NOTE: I just made this again last night. I had the "wrong" brand of cottage cheese in my fridge. In letting the boys practice their egg cracking skills, quite a bit of egg white was dripping down the side of my countertop. Then, I ended up using a 16oz pkg of spinach, and didn't realize it until later. Given the variance of some of these ingredients, I will generally just add a bit more fat to make up for any difference. So i used a whole stick of butter instead of 3/4--Voila! AJ is fine, and we are all happy. The end.
