Garlic Herb Bagel Meal

I don't even remember how I found this recipe, but I offer a heartfelt thanks to A Zesty Bite for creating the recipe that I have used many times now. This bagel is delicious! My husband and I want to gobble these up ourselves, but I'm trying to keep certain foods totally separate and "SPECIAL" for AJ. I always remember the advice from Rebecca who I met only weeks after my son's diagnosis. Her son, also diagnosed with G1D, was 10 years old at the time, and they both emphasized to me how important and motivating it was for him to have his own SPECIAL snacks and foods. His go-to at the time was "Moon Cheese."


I digress...


Here is the awesome recipe!


I serve it with butter, cream cheese, avocado, heavy whipping cream, carrots, and raspberries (but the fruit/veg element will also just depend on what I have). This meal was a great discovery and is still one of AJ's favorites. Not only does it taste good, but it can all be eaten cold -- perfect for summer, park outings, etc. I'll usually just mix the Nano (powdered multi-vitamin) with whipping cream and smashed raspberries.


These bagels aren't the easiest to make, in my opinion, but the effort is worth it. I end up doubling the recipe, which results in 14 bagels, and then I freeze about half.


**Allow me to share with you an actual note I made to myself after making a batch that may or may not have had tears of frustration involved: "Don't be discouraged. Weigh before washing hands and dough will "dry" on hands and then you can wring it off." I read this note every time and not one whimper since!
